In cider knowledge
Bohemian Cider founders Justin and Cynthia Oliver say cider culture in New Zealand is on the rise, thanks to the increasing number of passionate small producers out there.
A qualified winemaker, Justin brings 25 years of fermenting experience to Bohemian Cider. “We use wild, natural fermentations. This only works if you use organic apples, because the native yeast living on the apple skins has not been killed by the chemicals that are used in conventional orchards. We also ferment our cider with the apple skins and pulp – the way a good red wine is made. This gives our cider way more flavour than conventional fermentation.”
The Bohemian Cidery on Duck Creek Road is also known as the Flavour Lab. “We’re constantly trying out new flavour combinations – chilli, black pepper and persimmon have been on the tasting list lately.”
Cynthia says the team is also putting the finishing touches on their new tasting room which will be open for special events and by appointment.“It’s themed on an old Apple Packhouse but with velvet and chandeliers thrown in. The tasting room is surrounded by native bush and waterfalls with glow worms.
“Bohemian cider is not your standard fizzy apple water that usually masquerades as cider in New Zealand, we’re making dryer-style ciders with added flavours from other fruit and botanicals. This style of cider is a great-lower alcohol, lower-carb alternative, which also pairs well with a range of food styles.”
Other projects on the go are working with local lifestyle-block owners to get more cider apples planted in the area. “Cider apples are a great option for lifestyle blocks as they are much less work than olives or grapes and there’s the bonus of delicious cider at the end of the day,” says Justin.
Zero-alcohol beverages are the biggest growing segment of the industry at the moment, so Justin is working on zero-alcohol versions of their core cider range. He’s also planning a Cidermaker’s Reserve which will be certified organic. “It’s crazy but there’s no certified organic cider being made in New Zealand, we want to bring the clean and green back to cider.”
Bohemian Cider is available at local liquor outlets, selected bars and restaurants or have a taste at the Matakana Farmers' Market.
